Sharpen knives quickly using the Tru Hone® light commerical knife sharpener.

Set the speed control to "7" and the angle knob to "red".

Starting near the handle with light downward pressure keep the knife blade flat as you draw it towards yourself through the honing wheels. Lift the blade and move it back and pull the blade towards yourself again until you have a new edge.

Leave the speed control on "7" and move the angle knob to "white". This strenghtens (sets) the cutting edge. Draw the knife though the honing wheels two times (only do this two times).

Set the speed control on "3" and move the angle knob to "blue". This hones the cutting edge. Draw the knife though the honing wheels two times, test the knife, if not sharp enough repeat all these steps.
